The only Scottish-French restaurant in the US has been revamped by global culinary and beverage brand, SAVOR by Valor
Auld Alliance, the signature restaurant at McLemore Resort in Rising Fawn, Georgia, has launched its next chapter from SAVOR, part of the leading hospitality management company, Valor.
The elevation of the concept has been crafted in collaboration with SAVOR’s entire global team, a milestone for the group that was formed in 2024. Three Scottish chefs with classical French training and internationally recognized expertise - Matthew Gray, George Jardine, and Roy Brett - have led the culinary development, while the rest of the SAVOR team has provided insight into brand, venue design, mixology, service touchpoints, operational efficiencies and more.
The reimagined menu highlights seasonal ingredients and the culinary traditions of Scotland and France, with an emphasis on technique and local sourcing. Through SAVOR’s guidance, Auld Alliance has also introduced The Tasting Room, a private space offering guided experiences focused on Scottish whiskies, gins and French wines and champagnes.
Since its inception, SAVOR has focused on delivering high-quality, experience-led dining across Valor’s 100-strong global hospitality portfolio. Now in a growth period, new SAVOR concepts and venues are set to launch across multiple regions over the coming months, with a focus on high-growth markets such as Europe, the Middle East, Asia and Africa.
Euan McGlashan, Co-founder and Global CEO at Valor Hospitality, commented: “SAVOR was created to build concepts that not only are unique in character but also built to last. That means staying close, refining, evolving, and never assuming the job is done. Our clear focus is on relevance, energy, and the ability to keep moving.
“Auld Alliance is of that. It brings together something extremely rare, being one of only four Scottish-French restaurants in the world. Three in Scotland, and the fourth in the US. But more importantly, it shows how we work. This was not one idea from one place. It has been a brilliant collaboration across our global SAVOR team, with our three amazingly talented Scottish chefs, classically French trained, at the heart of it. All shaping something that feels rooted in the history of the Alliance and refreshingly new. That’s what SAVOR stands for. Creating food & beverage experiences with purpose and making them impossible to forget.”
